Adele held a Virtual Board Meeting on October 9, 2020 and it was very successful.
A few months ago, we donated to Milagro and Jacobs family, organizations that feed the needy, This month we will again donate to Milagro-some of their funding has been stopped; they are in dire need of money.
I would like to remind the membership that because of Covid 19-Adele has issued a statement that will be mailed to our membership stating the following:
Dear Members of Palm Greens Women’s Club: Re: MEMBERSHIP-We hope this letter finds you and your family well. As you may be aware the Club House has been closed because of Covid-19. Gatherings have been suspended. Because we do not know when The Club House will open, Women’s Club Board has decided to give FREE membership to all members returning to Palm Greens for the 2020-2021 season. Regards, Adele Reinstein

I have received some delicious recipes, but I need more-Entrees-Appetizers and Specialty Drinks I have plenty of pastry.
I am posting two recipes:
20 oz firm white fish (cod, haddock)
1 lemon zested and juiced
2/3 cup panko bread crumbs
1/3 cup grated parmesan cheese
2 T butter, softened
1 clove garlic minced
1 t. salt
½ t. pepper
½ t. cayenne (optional)
Lightly spread a mixture of mayonnaise and some of the lemon juice over fish
Mix rest of ingredients, other than lemon juice
Spread on fish, sprinkle with lemon juice
Bake 425 for 20 minutes
Optional- broil for a few minutes to brown
Serve with remaining lemon juice
Savory Zucchini Sticks by Judy Grayson
Nonstick olive oil cooking spray
3 tablespoons seasoned dry bread crumbs
2 tablespoons grated Parmesan Cheese
1 egg white
1 teaspoon reduced-fat (2%) Milk
2 small zucchini (about 4 ounces each] cut lengthwise into quarters
1/3 cup spaghetti sauce, warmed
- Preheat oven to 400 degrees. Spray baking sheet with cooking spray set aside.
- Combine bread crumbs and Parmesan cheese in a shallow dish. Combine egg white and milk in another shallow dish; beat with fork until well blended.
- Dip each Zucchini wedge first into crumb mixture then into egg white mixture letting excess drip back into dish. Roll again in crumb mixture to coat.
- Place zucchini sticks on prepared sheet; coat well with cooking spray. Bake 15 to 18 minutes or until golden brown. Serve with Spaghetti sauce.
